These bite-sized bruschetta toasts are the perfect appetizer! Crispy toasted baguette slices are topped with a fresh tomato, garlic, and basil mixture, and drizzled with balsamic glaze. Simple, vibrant, and full of flavor!

- 1 cup diced roma tomatoes about 2 medium tomatoes
- 1/4 cup finely diced yellow onion
- 2 cloves of garlic minced
- 2 tbsp chopped fresh basil
- 1/4 cup shredded parmesan cheese
- 1 small french baguette sliced into 1/2-inch rounds
- 1-2 tbsp olive oil for brushing the bread
- Salt and pepper to taste
- Balsamic glaze for dizzling
Preheat oven to 350°F (175°C).
Prepare the bruschetta mixture:In a medium bowl, combine the diced tomatoes, diced onion, minced garlic, chopped basil, and shredded Parmesan. Season with salt and pepper to taste. Mix gently until well combined.
Arrange baguette slices on a baking sheet. Brush lightly with olive oil on one side. Bake for 5–7 minutes, or until the edges are golden and crisp.
Spoon the tomato mixture onto each toasted bread slice. Drizzle with balsamic glaze just before serving.
Optional Add-ons:
- Add a pinch of red pepper flakes for a little heat.
- Swap Parmesan for mozzarella or goat cheese if desired.
