
Mini Bruschetta Toast
These bite-sized bruschetta toasts are the perfect appetizer! Crispy toasted baguette slices are topped with a fresh tomato, garlic, and basil mixture, and drizzled with balsamic glaze. Simple, vibrant, and full of flavor!

Ingredients
- 1 cup diced roma tomatoes about 2 medium tomatoes
- 1/4 cup finely diced yellow onion
- 2 cloves of garlic minced
- 2 tbsp chopped fresh basil
- 1/4 cup shredded parmesan cheese
- 1 small french baguette sliced into 1/2-inch rounds
- 1-2 tbsp olive oil for brushing the bread
- Salt and pepper to taste
- Balsamic glaze for dizzling
Instructions
- Preheat oven to 350°F (175°C).
- Prepare the bruschetta mixture:In a medium bowl, combine the diced tomatoes, diced onion, minced garlic, chopped basil, and shredded Parmesan. Season with salt and pepper to taste. Mix gently until well combined.
- Arrange baguette slices on a baking sheet. Brush lightly with olive oil on one side. Bake for 5–7 minutes, or until the edges are golden and crisp.
- Spoon the tomato mixture onto each toasted bread slice. Drizzle with balsamic glaze just before serving.
Notes
Optional Add-ons:
- Add a pinch of red pepper flakes for a little heat.
- Swap Parmesan for mozzarella or goat cheese if desired.
