These bite-sized bruschetta toasts are the perfect appetizer! Crispy toasted baguette slices are topped with a fresh tomato, garlic, and basil mixture, and drizzled with balsamic glaze. Simple, vibrant, and full of flavor!

Ingredients
  

  • 1 cup diced roma tomatoes about 2 medium tomatoes
  • 1/4 cup finely diced yellow onion
  • 2 cloves of garlic minced
  • 2 tbsp chopped fresh basil
  • 1/4 cup shredded parmesan cheese
  • 1 small french baguette sliced into 1/2-inch rounds
  • 1-2 tbsp olive oil for brushing the bread
  • Salt and pepper to taste
  • Balsamic glaze for dizzling

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Prepare the bruschetta mixture:In a medium bowl, combine the diced tomatoes, diced onion, minced garlic, chopped basil, and shredded Parmesan. Season with salt and pepper to taste. Mix gently until well combined.
  • Arrange baguette slices on a baking sheet. Brush lightly with olive oil on one side. Bake for 5–7 minutes, or until the edges are golden and crisp.
  • Spoon the tomato mixture onto each toasted bread slice. Drizzle with balsamic glaze just before serving.

Notes

Optional Add-ons:
  • Add a pinch of red pepper flakes for a little heat.
  • Swap Parmesan for mozzarella or goat cheese if desired.
