
One-Pan Baked Curry Dumplings w/ Bok Choy
This One-Pan Baked Curry Dumpling with Bok Choy is a quick, flavorful weeknight dinner featuring tender chicken gyoza baked in a creamy coconut red curry sauce with fresh Bok Choy, then finished under the broiler for a golden touch.

Ingredients
- 1 can unsweetened coconut milk 13.5 oz
- 2 tbsp red curry paste
- 1/2 tsp ground ginger
- 2 cloves garlic minced
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 package frozen chicken gyoza about 16, Trader Joe’s
- 2 bunches bok choy chopped
- cooked rice
Toppings
- cilantro
- chili oil
- sesame seeds
Instructions
- Whisk together coconut milk, red curry paste, ginger, garlic, soy sauce, rice vinegar, and sesame oil in a 9×13 pan.
- Spread bok choy evenly into the pan, then nestle dumplings flat side down into the liquid mixture.
- Bake at 375° for 20 mins, then broil for 2-3 mins until the tops of the dumplings are golden.
- Top with chili oil, sesame seeds, and cilantro! And serve over rice.
