Ingredients
  

  • 1 can unsweetened coconut milk 13.5 oz
  • 2 tbsp red curry paste
  • 1/2 tsp ground ginger
  • 2 cloves garlic minced
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 package frozen chicken gyoza about 16, Trader Joe’s
  • 2 bunches bok choy chopped
  • cooked rice

Toppings

  • cilantro
  • chili oil
  • sesame seeds

Instructions
 

  • Whisk together coconut milk, red curry paste, ginger, garlic, soy sauce, rice vinegar, and sesame oil in a 9×13 pan.
  • Spread bok choy evenly into the pan, then nestle dumplings flat side down into the liquid mixture.
  • Bake at 375° for 20 mins, then broil for 2-3 mins until the tops of the dumplings are golden.
  • Top with chili oil, sesame seeds, and cilantro! And serve over rice.
