
Creamy Tuscan Chicken

Ingredients
- 4 chicken breast
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp italian seasoning
- 1 tbsp minced garlic
- 1 cup chicken broth
- 1/2 cup heavy cream or coconut milk
- 1/2 cup sundried tomatoes drained and chopped
- 2 cups fresh spinach
- 1 tbsp lemon juice
- basil for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season chicken with salt, pepper, garlic powder, and Italian seasoning.
- Sear 4–5 minutes per side until golden. Remove and set aside.
- Lower the heat to medium. Add minced garlic; cook for 30 seconds.
- Pour in chicken broth and coconut milk. Stir and simmer for 3 minutes. Add sun-dried tomatoes.
- Return chicken to the pan. Add spinach and cook 5–7 minutes until wilted and the sauce thickens.
- Stir in lemon juice to brighten and top with fresh basil.
- Serve it with gluten-free pasta, rice, mashed potatoes, or quinoa.
