Ingredients
  

  • 4 chicken breast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp italian seasoning
  • 1 tbsp minced garlic
  • 1 cup chicken broth
  • 1/2 cup heavy cream or coconut milk
  • 1/2 cup sundried tomatoes drained and chopped
  • 2 cups fresh spinach
  • 1 tbsp lemon juice
  • basil for garnish

Instructions
 

  • Heat olive oil in a skillet over medium-high heat.
  • Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  • Sear 4–5 minutes per side until golden. Remove and set aside.
  • Lower the heat to medium. Add minced garlic; cook for 30 seconds.
  • Pour in chicken broth and coconut milk. Stir and simmer for 3 minutes. Add sun-dried tomatoes.
  • Return chicken to the pan. Add spinach and cook 5–7 minutes until wilted and the sauce thickens.
  • Stir in lemon juice to brighten and top with fresh basil. 
  • Serve it with gluten-free pasta, rice, mashed potatoes, or quinoa.
