Cherry Goat Cheese Crostini with Thyme

Ingredients
  

  • 1 baguette sliced into ½–¾ inch rounds
  • 1 cup whipped goat cheese or soft goat cheese and whip it
  • 1/2 cup cherry preserves
  • 1-2 tbsp honey
  • fresh thyme
  • olive oil
  • pinch of salt

Instructions
 

  • Preheat the oven to 400°F. Lay out baguette slices on a sheet pan, brush lightly with olive oil, sprinkle with salt, and bake for 6–8 minutes until lightly golden.
  • If using regular goat cheese, whip with a hand mixer or whisk until creamy. You can also mix in a teaspoon of honey if you want it a touch sweeter.
  • Spread each crostini with a generous layer of goat cheese. Add a small spoonful of cherry preserves on top.
  • Drizzle with extra honey, if not already added to the goat cheese, and sprinkle fresh thyme over each piece.
  • Best served slightly warm or at room temperature.
